Cav.Giovanni is a dry white wine obtained from 100% Erbaluce grapes.
The production oenological process is simple and follows the dictates of tradition using cutting-edge technologies to obtain a quality product. The first step, very important, involves a careful selection of grapes, healthy and with an adequate degree of ripening; then fast pressing, decanting and purification of the must and finally fermentation, with selected yeasts, which takes place in steel tanks, at controlled temperature, without passage in wood.
