Vinification: rapid pressing of the grapes. Selection of musts and start of alcoholic fermentation at controlled temperature. Rapid fermentation closure and immediate reinoculation for foaming.
Aging: minimum 2 months in watertight stainless steel tanks. After isobaric bottling, the wine is put on sale almost immediately with a minimum dosage of sugar (DRY).
