Variety: Pinot Noir 100%
Vinification: rapid and delicate pressing of the grapes without crumbling of the mass and start of alcoholic fermentation at a controlled temperature of 15-16 degrees. Fermentation of about 10-15 days. Aging on the lees in steel tanks for 4-5 months. The second fermentation takes place with the creation of a "cuveè", together with the base wine and sucrose give rise to the liquer de tirage that is added at the time of closing the bottle.
Aging: minimum 36 months in bottle. The bottles are taken to cellars near the stone of the mountain that allows you to keep the wine fresh for the months of aging. After disgorgement, the wine is stored for at least 4 months and then put on sale.
Characteristics in tasting: it is presented in the glass with a very fine perlage, perceived in the mouth as a beautiful citrus flavor. On the nose the typical aromas of Pinot Noir blend with hints of bread crust, the taste is very fresh and structured.
Pairings: ideal for fish, crustaceans, molluscs, exotic fruits or white risotto appetizers. Also excellent as an aperitif.
