Cold smoked rainbow trout slice.
As soon as received, the fillet is knocked down to a temperature of -20C°, and maintained for at least 24 hours. Once thawed at controlled temperature, marinating in salt and sugar is carried out and then smoked in the chamber at controlled temperature.
The product is then left to dry and then vacuumed.

Handcrafted handcrafted product. Bred in Italy in spring water.

Recipe: Cut cold-smoked trout into tartare. Apart from passing a burrata in the blender together with its water. Pour the burrata cream into a dish, lay on top of the tartare and decorate with the cherry tomatoes (raw or confit).
