Harvest: mid-September.
Vinification:drying in the attic of the bunches chosen in the vineyard until January. Before pressing, a further selection of the grapes is made to discard the unsuitable ones.
Aging:fermentation in steel tanks at a controlled temperature for a few weeks, aging in barriques and wooden tonneau for a few years. We then move on to the bottle, where the passito is aged in the cellar under the ground for a few months before being put on sale.

Aging capacity:excellent from 8-10 years onwards.
