The Pastificio Artigiano Il Castello was born in 1982 in Caravino, in the province of Turin, and soon becomes a point of reference for lovers of fresh pasta and the good flavors of the past for the whole of Canavese, Valle d'Aosta and Biellese.

It is here that today the Colautti family has developed the artisan workshop until it is included in the list of artisan excellences of the Piedmont region.

The production focuses on genres that differ in format and filling: panzerotti, plin, agnolotti and various types of fresh pasta. Fillings follow the seasons. In winter, meat is favoured, while in summer it is local herbs that are widely used.

The main feature of the company isthe careful choice of raw materials for both pasta and fillings, drawing on local flavors for the latter, ranging from the Canavese valleys to the Biellese and Valle d'Aosta alpine pastures.
