Salassa's canestrelli are a typical dessert of the poor peasant gastronomic culture:on Sundays, on the fire of the fireplace, mothers cooked polenta and, freshly cooked, poured it on the wooden cutting board to make it warm. In the empty copper pair there was a thin layer left that slowly dried up.
The children loved that roasted, crispy polenta cialdine on which they smeared a little butter, a few crumbs of sugar and wild fennel.
